Turkey Panini

Lunch is probably my favorite meal of the day, and I am always looking for a unique or different sandwich to make with anything I have in the fridge. Yesterday, I had a few slices of oven-roasted turkey, some sliced sharp provolone, and one sort of stale white roll. I didn't want an ordinary toasted roll, so I decided I would go panini and grill it.

Don't be thinking; I don't have a Panini machine, I can't do this! Of course, you can, with a non-stick frying pan, some salted butter, and something heavy like a meat mallet to press down on that soft, hard roll!!

Slice your sort of stale hard soft roll (crispy ciabatta or baguette will not work)

Add any sauce of your choosing. I used a horseradish mayo.

Add 2 slices of cheese or more if you prefer.

Add some spinach or tomato if you would like (this one does not have it).

Add sliced turkey

Top with other half of roll.

Butter each side of the bread like you would for a grill cheese.

Heat your pan to medium and place sandwich in the pan.

Take your meat mallet and push down hard on the bread in a couple different spots a couple different times.

Steam will start to brew and the butter will start to splatter!!! That is good.

Using a spatula, flip over the sandwich and repeat the process again of pressing down.

The cheese should start to melt and some sauce may spew out! It's okay!!

When golden brown on each side and cheese is melted remove form pan and slice on a diagonal.

Serve with chips and enjoy!!
